In Season: British Apples

Our resident chef Loopy has been celebrating the changing season and whipping up some treats as autumn begins. Here she shares her love of the great British apple. 

Autumn is undeniably enchanting. Beyond the colours and the crisp, frosty mornings, it's the season's bounty that truly captivates the heart. At this time of year, Britain overflows with a myriad of native produce, from the sweetness of blackberries and the earthiness of beetroots to the warmth of winter squash and pumpkins. Yet, there's one fruit that unmistakably defines the season – apples.

In the UK, the prominence of apples is celebrated widely. Here in Herefordshire, we are affectionately called "The Town in the Orchard", and we will be hosting an Applefest during October, marking the peak of apple season. Remarkably, the UK has cultivated over 2,500 unique apple varieties – eaters, cookers, and those perfect for cider, which of course, we love here at Seed.


The Classic Tarte Tatin with an Autumn Twist


To honour this quintessential autumnal fruit, let's delve into the classic Tarte Tatin. A recipe calling for simple ingredients, one pan, and (optionally) a generous scoop of ice cream. For a spirited twist, consider incorporating rum or whiskey into the caramel and sprinkling in aromatic garden herbs like sage or rosemary.

Nature has an innate wisdom, often pairing seasonal ingredients that perfectly complement each other. Take apples and blackberries, for instance. If Tarte Tatin isn't quite your cup of tea, a humble crumble combining these two autumn stalwarts is bound to delight. The only true dilemma? Deciding between cream, ice cream, or custard for the perfect finish.


Savoury Delights: Autumn Vegetable Magic

For those with a palate favouring the savoury, autumn doesn't disappoint. The season graces us with hearty soups made of carrots and squash, and salads brightened with red cabbage, radishes, and spinach. If you're looking for a swift yet flavourful dish, a seasonal slaw is ideal. Think celery and celeriac, carrots, cabbage, radishes, broccoli tops, and, of course, a dash of apple for sweetness. Tossed together with a tangy mustard dressing, it's lunchtime at its best!
